Bigger and better than book one, 30-Minute Meals 2 is superior in terms of paper quality, range of menu choices, and best of all - it has some glossy full color pictures in the middle of the book showing some of the dishes.I drooled at the sight of Pecan-Crusted Chicken Tenders and Salad with Tangy Maple Barbecue Dressing. I got excited about Tilapia with Tomatillo Sauce. I even marveled at the Veal Scaloppini with Wine, Mushrooms and Green Olives. I absolutely drew the line however, at Green Minestrone, which looked healthy, but not aesthetically pleasing.While some of the ingredients were not available to me, I was able to find some very workable recipes here, and I only wish there had been photographs of every dish, to give me a better idea of what to expect at the end of the 30 minute period.Better for beginners than book one, but could still use some tweaking.Amanda Richards, June 22, 2005
I am a fan of Rachael Ray's "30 Minute Meals" television program - I find her approach to cooking to be casual and fun. I also like her enthusiasm and her belief that cooking new and interesting meals from scratch can be done by anyone. Having purchased this book about 6 months ago, I have so far only made 2 complete meals: "Stuffed Pork Chops" and "Passport to Belgium". From my limited experience with Rachael's recipes, here are my thoughts.First the good: as she emphasizes on her show, her recipes call for ingredients that are readily available in large grocery stores. The most "exotic" items that I had to pick up were leeks and sugarcubes. Also, she does use, when necessary, convenience items, like chicken stock or broth from a can, or frozen pound cake and Redi-whip. Otherwise, her recipes call for fresh meat,produce and dairy. Both recipes that I followed turned out well - even my 5 year old liked them, which says a lot.My only criticism was that these meals took longer than 30 minutes - closer to 45 minutes for me in both cases. I firmly believe that these meals can be prepared in the time allotted; the problems that I ran into had more to do with cooking in "real world" situations: watching the kids, dealing with limited counter space, needing to wash and reuse the same utensils for meat and produce, etc. However, I was impressed with what I was able to make in under an hour!Overall, I'd highly recommend this cookbook. Rachael Ray has put together some delicious and fast recipes, and I am looking forward to trying more of her meals.
Flavorful recipes using everyday foods that can be made in 30 (okay, more like 40) minutes. A good variety of dishes to please kids, parents and visitors alike. We are sold on the meatball soup, easy flavorful and healthy! Don't necessarily count on the recipes coming off in 30 minutes the first time around, but with a bit of practice these meals can be done in less time than it would take to get in the car and drive to a local drive-through. Have fun with the recipes, there are a lot of terrific ideas waiting for in this book!
Rachael Ray comes shining through in this wonderful cookbook full of great combination meals. These recipes are simple to follow with easy to find ingredients which helps cut the preparation time. I especially enjoy her choices of spices and discovering the fresh ones in the produce aisle is an adventure and education. Rachael makes cooking more interesting with the use of new to me ingredients--like bread crumbs in a can. At last, a down to earth cook who is easy to relate to!

I had purchased this years ago but lost it in a move. I am glad I found it again, it has many simple and delicious recipes.
I bought this as a gift for my daughter who is a very busy career woman, mother and wife. There are a lot of ingredients that are not common in a kitchen cupboard. Although the cookbook tells you where to get the ingredients, my daughter doesn't have time to run all over town gathering them up like she is on a scavenger hunt. Thus it looses the 30 minute meal preparation to us. The recipes are okay otherwise what few she has had a chance to prepare. If you like going from shop to shop picking up ingredients this is the recipe book for you. If you want ingredients that you can get at your local grocery store, I don't recommend this book.
